For this gut-friendly, high fibre smoothie, we’re sharing a variation of this smoothie. A nutritious, detox and gut-friendly smoothie with one special addition…happiGut prebiotic fibre. 1 cup of this smoothie is packed with a whopping 19.5 grams of fibre, that’s over 1/2 your fibre requirement for the day! This vibrant smoothie is nutritious, fibrelicious and delicious! Makes 2 cups.

Ingredients:

1 kiwi (firm, not too soft), peeled and sliced in half
¼ avocado
4 tablespoons chia seeds (see note below)
½ lime, juiced
¼ cup packed fresh mint leaves
1 cup ice
1 cup coconut milk
1 cup packed spinach or 1 medium kale leaf, stem removed

2 teaspoons happiGut Prebiotic Fibre

Method:

Combine all the ingredients in a blender and blend at high speed until
smooth. Garnish with slices of kiwi. Enjoy and energize your day!

NOTE: To activate the enzymes in the seeds and nuts in any smoothie
recipe for easier digestion, you can soak them ahead of time. Fill a bowl
with enough water to cover the seeds or nuts and soak for at least
30 minutes, preferably overnight if time permits.
