You can just imagine the smell of comfort, caramel and oats enveloping the room with this warming and delicous Sweet Potato Salted Caramel Baked Oats. Ingredients:

3 heaping tbsp quick oats

3 tablespoons protein powder

1 – 2 teaspoons of happiGut Whole Food Prebiotic Fibre

1/4 teaspoon baking powder

Pinch of salt

1 small baked and mashed sweet potato

1/4-1/2 cup of milk of your choice

Vanilla extract 

Optional filling: Greek yogurt cream cheese & marshmallows 

Method:

Combine dry ingredients. 

Combine wet ingredients with 1/4 cup of milk. Add dry into wet and mix well. Add more milk if necessary. 

In a small ramekin place half of the mix.

Place a scoop of cream cheese and some marshmallow.

Add remaining mixture. 

Bake in the preheated oven at 400 for 20-25 mins.
