happiGut Mango Lassi Pops

Summer’s here and we’re craving refreshing and gut friendly mango lass treats !

Ingredients:

  1. 2 ripe mangos or we used 1 can of @chasorganics mango chunks and pureed them
  2. 1 can of @chasorganics coconut cream (or you can use greek yogurt)
  3. 1/2 cup pineapple juice
  4. Juice of one lime
  5. 1 tablespoon maple syrup
  6. 2 teaspoons happiGut prebiotic fibre powder
  7. 1 tsp cardamom powder
  8. 1 tsp of vanilla extract.

Method:

  1. If using fresh mango, peel & cut the mango into chunks
  2. Add mango chunks, pineapple juice and lime juice to a blender and give it a whiz until smooth.
  3. In a separate bowl mix together coconut cream or yogurt, maple syrup, cardamom powder, happiGut and vanilla extract
  4. Add to the blender and give the whole thing a good blend until its smooth.
  5. Fill popsicle moulds or use paper cups if you don’t have mould and insert a popsicle stick in the middle and freeze overnight
