Summer’s here and we’re craving refreshing and gut friendly mango lass treats !
- 2 ripe mangos or we used 1 can of @chasorganics mango chunks and pureed them
- 1 can of @chasorganics coconut cream (or you can use greek yogurt)
- 1/2 cup pineapple juice
- Juice of one lime
- 1 tablespoon maple syrup
- 2 teaspoons happiGut prebiotic fibre powder
- 1 tsp cardamom powder
- 1 tsp of vanilla extract.
- If using fresh mango, peel & cut the mango into chunks
- Add mango chunks, pineapple juice and lime juice to a blender and give it a whiz until smooth.
- In a separate bowl mix together coconut cream or yogurt, maple syrup, cardamom powder, happiGut and vanilla extract
- Add to the blender and give the whole thing a good blend until its smooth.
- Fill popsicle moulds or use paper cups if you don’t have mould and insert a popsicle stick in the middle and freeze overnight
